I recently got a Soda Stream for my birthday and am kind of obsessed with my ability to make sparkling water…

Over the long weekend, I had a little extra time and peaches and wanted something a little different to spice up my sparkling water and decided to make a lovely peach simple syrup. I’m definitely not at all a soda person, so I made the simple syrup more peachy than sweet and added just a little to the sparkling water.  (This is fantastic with a little vodka as well!)

peach simple syrup

3 peaches, cubed (not super important how you cut it, just as long as its small!)

2 cups filtered water

1/2 cup sugar (add more if you like your sodas very sweet; I tend to under sweeten)

Add all ingredients into a sauce pan and boil.  Once it reaches a boil, turn heat to low and let simmer about 45 minutes, or until half of the liquid is gone.  Strain contents into a large bowl with a fine sieve/strainer.  Make sure to mash the peaches in order to get as much juice as possible of them!  Reserve the peach solids for Lemon Peach Yogurt Cake!

Once only the liquid is remaining, pour into an airtight container and let chill.  Add to sparkling water and enjoy!!!
