This cake is super simple, delicious, and an easy way to use up the peach puree from your peach simple syrup recipe!

Lemon Peach Yogurt Cake

Makes 1 loaf + 6 muffins

1 1/2 cup flour

1/2 cup white sugar

1 tsp brown sugar

1 tsp baking soda

1/3 cup canola oil

2 tsp vanilla extract

1/2 cup peach puree (from peach simple syrup; if you don’t have this, you can use peach (or any fruit) puree or yogurt!)

1 cup vanilla yogurt

juice from 1 large lemon

Instructions

Preheat oven to 350. Mix all dry ingredients together in a large bowl. Mix all wet ingredients together in a smaller bowl and add to dry ingredients. Add batter to greased muffin tins or loaf pans and bake 20-25 minutes, or until golden brown.
